<?xml version='1.0' encoding='iso-8859-1' ?><rss version='2.0'><channel><title><![CDATA[Hidden Springs Farms]]></title><description><![CDATA[A little piece of country]]></description><link>http://www.hiddenspringsfarms.com</link><language>en-us</language><docs>http://blogs.law.harvard.edu/tech/rss</docs><copyright>Copyright 2012Hidden Springs Farms</copyright><item><title><![CDATA[Greetings From Hidden Springs Farms]]></title><description><![CDATA[<span style="font-family: comic sans ms,sans-serif; color: #800000; font-size: small;">Hi to Everyone!<br /><br />&nbsp;&nbsp;&nbsp; I am wondering if I missed Winter this year.&nbsp; While it has gotten cold a few days, over all, the weather has been rather pleasant, although a bit too wet for me.&nbsp; We have spring flowers already popping up on the farm.&nbsp; Don't get me wrong, I enjoy the fact that I have not had to break thick ice on the livestock water tanks and my little utility vehicle hasn't given me a hard time about starting, but I wonder if we are heading for a final BIG winter storm.&nbsp; I'll keep my fingers crossed that old man winter has just decided to leave us alone this year.&nbsp; <br /><br />&nbsp;&nbsp;&nbsp; We have a new addition!&nbsp; No, Bitty still hasn't had her calf.&nbsp; (she is HUGE but apparently the due date was off a bit)&nbsp; Let me introduce you to Hannah.&nbsp; Hannah is a week old Angus heifer that arrived at the farm yesterday as a bottle baby.&nbsp; Hannah's mom decided she didn't want to be a mother and abandoned her.&nbsp; So, the farm ensured that Hannah got the first milk from momma that she needed and switched her over to the bottle. Hannah is enjoying Goat's milk on our farm.&nbsp; Isn't she the cutest thing?<br /><img title="Hannah " src="http://www.hiddenspringsfarms.com/images/gallery/w500/1328546902_b3e79a2930f3.jpg" alt="Hannah" /><br />I am talking the UT Extension Master Beef Producers Class.&nbsp; While I am far from a beef "producer", the class is giving me the opportunity to learn more about cattle and benefit from the wealth of research and knowledge that UT has gathered.&nbsp; The class meets once a week for about 9 weeks.&nbsp; I would encourage you to check out your local Extension Office for classes and workshops.&nbsp; They offer something for everyone.&nbsp; <br /><br />&nbsp;&nbsp;&nbsp;&nbsp; We had out 1st Soap Making Class this past Saturday and had a great time.&nbsp; All of the participants got to make their own creations with our basic recipe.&nbsp; I love to see the creativity!&nbsp; Our soap making classes are now booked through the end of March.&nbsp; If you are interested in attending one this year, be sure to check out our calendar and register early.&nbsp; Our classes have been filling up early this year.&nbsp; (YEAH!)&nbsp; We have a couple great classes in March that some of you might be interested in:&nbsp; March 10th:&nbsp; Raising Chickens, March 24th: Growing Herbs, and March 31st: Raising Goats.&nbsp; You can get more info on the website or simply shoot us an email and we'll send you the details.<br /><br />&nbsp;&nbsp;&nbsp;&nbsp; <img title="The Girls with Mom" src="http://www.hiddenspringsfarms.com/images/gallery/w500/1328546902_a8a9afaf129c.jpg" alt="pups" width="500" height="373" /><br /><br />Our Anatolian Shepherd pups are now 8 weeks old and ready for their new homes.&nbsp; We still have a few available is you are interested.&nbsp; These guys were born and raised with goats and love to watch the chickens, cows, and horses.&nbsp; It is funny to hear them bark when they hear a strange noise.&nbsp; They think they are as big as momma.&nbsp; <br /><br />&nbsp;&nbsp; We still have some places in our Chicken, Egg, and Goat-Share CSA.&nbsp; If you are interested in getting pasture-raised chicken and eggs from us this Spring and Summer, be sure to sign up soon.&nbsp; We don't want anyone to be disappointed.&nbsp; The first group of chickens will be arriving in March and will be ready for dinner the 1st week of May.&nbsp; The laying hens are still on vacation until the days extend a bit, but it won't be long before they are laying like crazy.&nbsp; <br /><br />&nbsp;&nbsp; I thought I would share this super easy and fabulous recipe that my mother has used for years.&nbsp; It is a wonderful desert on a cold-wintery night (or anytime...really, I could eat it for breakfast!!) <br /><strong><br />Mom's Apple Crisp</strong><br />7 apples, peeled &amp; sliced thin<br />1 Cup Flour<br />1 1/2&nbsp;Cup Sugar (divided)<br />1 ts. baking powder<br />1/2 ts salt<br />1/2 ts cinnamon<br />1 egg<br />1/3 C vegetable oil<br /><br />Pre-heat oven to 350 degrees.&nbsp; Place sliced apples in an 8x8 baking dish.&nbsp; Sprinkle 3/4 Cup of sugar over apples and then sprinkle cinnamon.&nbsp; Set aside.&nbsp; In a bowel mix flour, remaining suger, baking powder, and egg.&nbsp; Mix until crumbly.&nbsp; Sprinkle over apples.&nbsp; Slowly pour vegetable oil over topping and then sprinkle with a bit more cinnamom.&nbsp; Bake for 45 minutes until topping is golden brown.&nbsp; Enjoy by itself or add whipped cream or ice cream.&nbsp; <br /><br />All of my seeds are ordered and I am ready to get my hands dirty again.&nbsp; It won't be too much longer before we'll be planting the garden.&nbsp; And, baby goats will start arriving in a few more week.&nbsp; Winter, what we had of it, has gone by fast.&nbsp; Spring is the BUSY time and it is getting here real quick!<br /><br />Hope all is well on your homefront!&nbsp; Come and visit soon<br /><br />The Staff at Hidden Springs Farms<br /><br /><br /><br /><br />1 egg</span>]]></description><link><![CDATA[http://www.hiddenspringsfarms.com/blog/13504]]></link><pubDate>Mon, 06 Feb 2012 11:23:37 -0600</pubDate></item><item><title><![CDATA[Anatolian Shepherds]]></title><description><![CDATA[<p style="text-align: center;"><span class="fontSize3" style="font-family: comic sans ms,sans-serif;"><span style="color: #993300;"><strong>We have PUPPIES! &nbsp; Born Saturday, December 10th.&nbsp; We'll get pictures of these beauties posted soon.&nbsp; Pups will be ready for their new homes on Feb. 4, 2012.&nbsp; Email us for details if you are interested in one of our pups.</strong>&nbsp; </span></span></p>

<p><span class="fontSize3" style="font-family: comic sans ms,sans-serif;"><span style="color: #993300;">Our livestock is guarded by our Anatolian Shepherds, Emma, Trooper, and Little Girl.&nbsp; Anatolian Shepherds come from the Turkish Anatolian Plateau and can be found across that region into Afghanistan.&nbsp; The Anatolian was bred as a livestock guardian (not a herding dog) and will happily live his or her&nbsp;life in constant association with sheep or goats, horses,&nbsp;chickens, turkeys<span style="font-family: helvetica,arial,sans-serif;">&nbsp;and children.&nbsp; They are fiercely loyal and very intelligent with a long memory.&nbsp;</span></span></span></p>
<p><span class="fontSize3" style="font-family: comic sans ms,sans-serif;"><span style="color: #993300;"><span style="font-family: helvetica,arial,sans-serif;">&nbsp;<span style="font-family: comic sans ms,sans-serif;">Because of their size and possessive attitude toward family, property and livestock it is important that&nbsp; Anatolians be well socialized.&nbsp; Adult male Anatolians will weigh in at 100-150 lbs., while females will weigh 80-120 lbs.</span></span></span></span></p>
<p><span class="fontSize3" style="font-family: comic sans ms,sans-serif;"><span style="color: #993300;"><span style="font-family: helvetica,arial,sans-serif;"><span style="font-family: comic sans ms,sans-serif;">&nbsp; Our Anatolian Shepherds are not pets.&nbsp; They are working dogs and keep our livestock safe from coyotes, foxes, domestic dogs, and more.&nbsp; </span></span></span></span></p>

<p><span style="color: #800000; font-size: small; font-family: 'comic sans ms', sans-serif;"><br />&nbsp;&nbsp; We hope that all of you had a wonderful holiday season and were able to spend time with family and friends. &nbsp;Christmas is such a busy time for everyone that we often forget to slow down and just enjoy being with family. &nbsp;We had a wonderful Christmas and a very busy December. &nbsp;We are excited to be starting a new year. &nbsp;We have so much planned for 2012 and lots of announcements for you in this newsletter. &nbsp;</span></p>

<p><span style="color: #800000; font-size: small; font-family: 'comic sans ms', sans-serif;"><br />First off, small drum roll....Our 2012 CSA program is now available for you. &nbsp;This year we will again be offering our Adopt-A-Hen (eggs) share and Poultry Share plus we are adding a Soap share and A Goat's Milk Herd Share Program. &nbsp;You can download our brochure by <a title="CSA Brochure" href="http://sfc.smallfarmcentral.com/dynamic_content/uploadfiles/37/2012%20CSA.pdf">clicking here</a> and you can easily sign up going to the Member Sign-up section under the Farm Store tab on our website. &nbsp;The Goat's Milk Herd Share program gives you partial ownership in our herd of Nubians and under this program, you will receive raw goat's milk each week. &nbsp;This program is new and we will have a very limited number of shares available. &nbsp;If you have questions about any of the CSA programs, please contact me. &nbsp;</span></p>

<p><span style="color: #800000; font-size: small; font-family: 'comic sans ms', sans-serif;"><br />&nbsp;&nbsp; We made a quick trip to Missouri right before Christmas to pick up my Christmas present. &nbsp;Pearl and Little Bitty. &nbsp;Pearl, pictured above, had her baby before we picked her up. &nbsp;Little T-Bone is doing very well and growing like crazy. &nbsp;Bitty is due to have her calf anytime now so I am watching and waiting. &nbsp;Both girls are percentage Belgian Blues. &nbsp;If you google Belgian Blue, you'll be able to see just how muscular these cows get. &nbsp;I will be updating the website soon to have more information about the breed. &nbsp;Right now, I am just enjoying getting to know the girls and having them getting to know me. &nbsp;It didn't take them long to figure out that the lady with the food bucket is OK. &nbsp;Our trip was quick, but we did have a great time. &nbsp;It was an 8 hour drive to get there and well....about 10 1/2 hours home because we missed an important turn and took the scenic route. &nbsp;But everyone arrived happy and healthy. &nbsp;My two little Dairy heifers, Josie and Clarabell, finally discovered that they are cows and not goats. &nbsp;We let the big girls get used to the little girls through the fence before we put them all together, but had no problems at all. The little girls play with T-Bone daily. &nbsp;I will post pictures of Bitty's baby as soon as it arrives. &nbsp;</span></p>
<p><span style="color: #800000; font-size: small; font-family: 'comic sans ms', sans-serif;"><br />&nbsp;&nbsp; &nbsp;A quick update on everyone else: &nbsp;All of the "girls" are bred and we will be seeing our first Nubian kids towards the end of Feb. &nbsp;It is always an exciting time when the baby goats start arriving. &nbsp;The hens have gone into slow-down mode. &nbsp;When the days get shorter and the weather colder, the hens decide it is not important to lay as many eggs. &nbsp;I guess everyone is entitled to a vacation now and then. &nbsp;The horses are fat and happy in the pasture. &nbsp;I ride when I get the chance and the weather cooperates. &nbsp;And, well, the dogs and barn cats are always up to something. &nbsp;</span></p>

<p><span style="font-size: small; font-family: comic sans ms,sans-serif;">&nbsp;&nbsp;&nbsp;&nbsp; It's hard to believe that it is December already. Another year is almost over. We hope that everyone had a wonderful Thanksgiving with their friends and families. I will admit, it is much quieter around the farm now that the turkeys are all gone.&nbsp; I've heard from many of our customers that purchased a turkey from us this year and everyone gave high marks!&nbsp; </span></p>
<p><span style="font-size: small; font-family: comic sans ms,sans-serif;">&nbsp;&nbsp;&nbsp; The weather has been typical Tennessee weather.&nbsp; One day sunny and 70 and the next day, cold, windy, and temps in the 30's.&nbsp; We've had a considerable amount of rain and honestly, my goats all informed me that they were moving to South Texas and I said I'd go with them.&nbsp; Goats don't like rain and neither do I.&nbsp; <br /></span></p>

<p><span style="font-size: small; font-family: comic sans ms,sans-serif;">&nbsp;&nbsp;&nbsp; We often get visitors at the farm and usually enjoy having them.&nbsp; This little fellow was not quite so welcome.&nbsp; Going out to close the door to the chicken coop one night after dark, I turned the corner and ran right into him.&nbsp; Not sure who was more scared, me or him.&nbsp; Anyways, our son set a trap right outside the chicken coop, and sure enough, he was captured. I don't want to share my eggs with a opossum.&nbsp; No worries, we do catch and release, so he was "relocated".&nbsp; </span></p>

<p><span style="font-size: small; font-family: comic sans ms,sans-serif;">Right after Christmas, we will have two new additions to the farm.&nbsp; Pearl and Little Bitty, two percentage Belgian Blue heifers will be coming from Missouri.&nbsp; (well, technically, they are bred heifers and once they deliver their calves, they will be called Cows....I'm am still learning my Cow Terminology.)&nbsp; Belgian Blue are very muscular cows.&nbsp; We're excited and of course, will keep you posted on how thing are going. color: #993300; font-size: small;">A Happy Fall Greetings from Hidden Springs Farm,<br /><br />&nbsp;&nbsp;&nbsp; The leaves are changing colors and the mornings have been crisp and cool.&nbsp; A few mornings even felt like we'd skipped fall all together and went directly to winter.&nbsp; Anyways, we love fall her on the farm.&nbsp; Things are starting to slow down and the cooler weather makes it so enjoyable to be outside.&nbsp; The horses are starting to get their&nbsp;winter coats and it won't be long before&nbsp;they are all wooly!&nbsp;&nbsp;<br /><br />&nbsp;&nbsp; Thanks to everyone that supported the Robertson County Farmer's Market this&nbsp;year.&nbsp; We had&nbsp;our last market this past Saturday.&nbsp; It was a great year and we&nbsp;so enjoy meeting&nbsp;and seeing everyone.&nbsp; Amazing as it is, it won't be long before we are all back at the market again!<br /><br />&nbsp;&nbsp; OK, so now for the Pig update:&nbsp; <strong>WE ARE PIG FREE!&nbsp; YES!&nbsp;</strong> Jon,&nbsp;our oldest son came over last Tuesday and after lots of pulling and pushing, we got the pigs loaded in the trailer.&nbsp; My parents were also here and helped to keep the pigs from pushing down the small alleyway I made to get them from the pen to the trailer.&nbsp; I am sure if we had a video camera rolling, we could have won America's Funniest Video.&nbsp; The pigs screamed their heads off and Jon&nbsp;says the smell will never get out of his boots.&nbsp; Now I am just waiting for the processor to call and let me know I can pick&nbsp;up the finished products.&nbsp;I am a huge animal lover but I can honestly say I did NOT shed a single tear when Porkchop, Hambone, and Wilbur left.&nbsp;&nbsp;<br /><br />&nbsp;&nbsp;&nbsp;&nbsp; This weekend is the <strong>Christmas Sampler</strong> in Springfield.&nbsp; This is a huge event and we are very excited to be attending this year.&nbsp; The event is at "The Center" in downtown Springfield,&nbsp;and runs Friday, Nov. 4th from 4:00 - 9:00 pm and Saturday, Nov. 5th from&nbsp;8:30 - 5:00&nbsp; For more details&nbsp;you can visit the website at: www.christmassampler.org<br /><br />&nbsp;&nbsp;&nbsp;&nbsp; Our calves, Josie and Clarabell, have been weaned now.&nbsp; I have to say, I do miss&nbsp;our daily bottles.&nbsp; I am sure both girls would agree.&nbsp; They are getting big and Clarabell was actually sick.&nbsp; But, thanks to our neighbors, the Gunn's, Clarabell got a big shot&nbsp;and is doing great now.&nbsp; The Turkeys are entering their final month.&nbsp; We will be driving them to Bowling Green on the 22nd of November.&nbsp; I still&nbsp;have a couple available for Thanksgiving if anyone is interested.&nbsp; They are looking very good.&nbsp; It will be so quiet once they leave.&nbsp; It is amazing how loud they can be.&nbsp; Every little sound causes them to sound off.&nbsp;&nbsp;<br /><br />&nbsp;&nbsp;&nbsp; I've had&nbsp;several emails asking&nbsp;about our classes.&nbsp; We will start back up in late Feb/early&nbsp;March.&nbsp; We rest and recover during Nov/Dec/Jan.&nbsp; We will have some new classes this year plus our most popular soap-making, raising chicken &amp; goats, and making herbal salves will be offered more frequently.<br /><br />&nbsp;&nbsp;&nbsp; As we enter November, we wanted to take a minute to wish everyone a Wonderful Thanksgiving!&nbsp; We are thankful for&nbsp;family and friends and all of our customers.&nbsp; color: #993300; font-size: small;">Hi to everyone!<br /><br />&nbsp;&nbsp;&nbsp; The last few days we've had a taste of fall here in Tennessee.&nbsp; It was only in the upper 30's Sunday morning.&nbsp; I'm not complaining...I am ready for the cooler weather.&nbsp; It has been a long hot summer.&nbsp; The horses are starting to get their winter coats and the days are getting shorter, so it won't be long before we will be braving wintery weather.&nbsp; The animals are all enjoying the cooler weather.&nbsp; The turkeys are counting the days until Thanksgiving....<br /><br />&nbsp;&nbsp;&nbsp; Fall is a wonderful time of year.&nbsp; For those of you with home-school groups or others that simply would like to visit the farm, fall is a great time to do it.&nbsp; You can email us for details and we can schedule a convenient time for you to come.&nbsp; <br /><br />&nbsp;&nbsp;&nbsp; Just a few more weeks of the Robertson County Farmer's Market.&nbsp; If you haven't been lately, you need to plan to visit.&nbsp; The weather has been great this growing season so there are still lots of veggies available.&nbsp; Last week I saw several types of peppers, sweet potatoes, beans, lettuce, raddishes, pumpkins, and more.&nbsp; Looks good enough to eat, but do not recommend it.&nbsp;&nbsp;<br /><br />&nbsp;&nbsp; We wanted to share a recipe with you that is prefect for these cooler nights.&nbsp; And, also quick and easy to make.....I love quick and easy:<br /><br />Cha Cha's White Chicken Chili<br /></span></p>
<li class="plaincharacterwrap ingredient">1 tablespoon vegetable oil</li>
<li class="plaincharacterwrap ingredient">1 onion, chopped</li>
<li class="plaincharacterwrap ingredient">3 cloves garlic, crushed</li>
<li class="plaincharacterwrap ingredient">1 (4 ounce) can diced jalapeno peppers (you can use milder peppers if you prefer)</li>
<li class="plaincharacterwrap ingredient">1 (4 ounce) can chopped green chile peppers</li>
<li class="plaincharacterwrap ingredient">2 teaspoons ground cumin</li>
<li class="plaincharacterwrap ingredient">1 teaspoon dried oregano</li>
<li class="plaincharacterwrap ingredient">1 teaspoon ground cayenne pepper</li>
<li class="plaincharacterwrap ingredient">2 (14.5 ounce) cans chicken broth (or better, make your own broth!!)</li>
<li class="plaincharacterwrap ingredient">3 cups chopped cooked chicken breast</li>
<li class="plaincharacterwrap ingredient">3 (15 ounce) cans white beans</li>
<li class="plaincharacterwrap ingredient">1 cup shredded Monterey Jack cheese</li>
<ol>
<li><span class="plaincharacterwrap break">Heat the oil in a large saucepan over medium-low heat. Slowly cook and stir the onion until tender. Mix in the garlic, jalapeno, green chile peppers, cumin, oregano and cayenne. Continue to cook and stir the mixture until tender, about 3 minutes. Mix in the chicken broth, chicken and white beans. Simmer 15 minutes, stirring occasionally. </span></li>
<li><span class="plaincharacterwrap break">Remove the mixture from heat. Slowly stir in the cheese until melted. Serve warm. </span></li>
</ol>
